Xanthan Gum: What, benefits and possible risks

What is xanthan gum? It is present in a number of foods, even an unknown component for most. Xanthan gum is a xanthan or natural additive (Usually appears as E-415), a polysaccharide result of fermentation of a bacterium (Xanthomonas campestris).
